super drink…Beet Kvass. Lacto-fermented foods are valuable to a healthy intestinal flora. Beets have a regenerating effect on the body. No Ukrainian home was ever without its beet kvass. This drink is valuable for its medicinal qualities and as a digestive aid. Beets are loaded with nutrients. One 4oz glass, morning and night, is an excellent blood tonic, promotes regularity, aids digestion, alkalizes the blood, cleanses the liver and is a good treatment for kidney stones. Beet kvass can be used in place of vinegar in salad dressings and added to soups.
BEET KVASS
3 med or 2 lg organic beets, peeled and chopped up coarsely
1/4 c whey
1T sea salt
water
Place beets, whey and salt in a 2qt glass container. Add filtered water to fill the container. Stir well and cover securely. Keep at room temp for 2 days before transferring to refrigerator.
When most of liquid has been drunk, you may fill up the container with water and keep at room temp another 2 days. The result will be slightly less strong than the first. After 2nd brew discard beets and start again. You can reserve some of the liquid and use this as your inoculant instead of the whey. Do not grate the beets…too much juice resulting in a too rapid fermentation that favors alcohol rather than lactic acid.
Whey is easy to get from yogurt. Line a lg strainer set over a bowl with a clean dish towel. Pour in yogurt, cover and let stand at room temp a few hours. The whey will run into the bowl. Cream cheese is left in the towel, Refrig up to a month.
